Adding a twist to your food is always fun. Just a pinch of twist and voila! its a new dish.
Since we are in desperate times and maintaining healthy lifestyle without compromising our taste buds has become more and more difficult these days. I belong from a world’s second most populated country; India. Yes! the second most populated country and the seventh largest country on the globe. Well coming back to my reason for writing this blog.


Idli- Sฤmbhar or Savoury rice cakes is one of the easiest and popular breakfasts in South India and is very healthy and delicious. Generally, we have healthy rice Idli. But! How about if we simply change the basic ingredient to a more healthy one? Yes, one such option is Green gram ( Moong dal). It is rich in protein and a perfect substitute for replacing rice. You can use green gram in a traditional to make the batter or can opt for an easy hack which I usually do; make flour out of green gram like we generally do for wheat flour or Besan( gram flour. You can stock for a longer time and, is very easy to make Idli from it. Also, to accompany Idli you can cook Sฤmbhar and make coconut condiment or chutney.
Twiddling Idli Recipe
- Idli Ingredients: Green gram, finely green chillies, cashews, ginger, Carrots( optional) and coriander , mustard seeds, cumin seeds, Oil to stir fry, Chana dal- a pinch( 10-15 pieces), asafoetida( hing), curd, curry leaves and, fruit salt( ENO).
- If you want to want to make it in a traditional way then soak the green gram for coupe of hours prior. Now blend it in a jar into a fine paste.
- Add curd, one table spoon, add water accordingly and mix them well without leaving any lumps.
- If you are making it with the flour then just take the required amount of flour in bowl, add a spoon curd, you can adjust the curd’s amount accordingly and then add salt.
- Mix them very well by adding water and make sure there are no lumps in the mixture. The consistency should not very thin nor thick. It should be ideal for making Idli, some where in the middle.
- Now take a pan put some oil of your choice and then add mustard seeds, cumin seeds, curry leaves, Green chilies, cashews, yellow gram, and carrots.


7. Stir fry them well add a pinch of salt and transfer it into the bowl of the mixture you have prepare earlier. Now add a pinch of asafoetida, coriander and salt according to your taste.
8. Mix them well. Now prepare the Idli cooker and its molds for batter.
9. Firstly, put some water in the cooker at a level so that Idli mold’s base stand will immerse and will get perfect steam for Idli.
10.Now grease the molds with oil well. Now add a half packet of eno ( fruit salt) to the mixture and mix well and make it frosty.
11. Without any further delay start pouring mixture into mold do not over fill it. And put it into Idli maker an cover it for about 20 mins.
12. Your idli will be ready in 20 mins meanwhile You can prepare for Sฤmbhar and coconut chutney. .
Twisted Sฤmbhar Tempering
- Ingredients: Vegetable of your choice like pumpkin, carrots, drumsticks, Onions etc., Split pigeon peas or Tur dal half cup, Green chilli two slit, Garlic( optional) Curry leaves, Tarmind water or extract, Jaggery, Spices like mustard seeds, methi dana ( optional), turmeric powder, red chilli powder, salt for taste and Sฤmbhar Masala.
- Chop all the vegetable according to your comfort. Now, wash the tur dal or you can cook it in a cooker to ease your work. and keep aside.
- Now take a pan heat some oil in it and then add cumin seeds green chilli garlic( optional). Now add all the vegetables and add a pinch of salt in the pan and stir fry them.
- Add the Tarmind water or extract and let the vegetable cook in that water for couple of minutes.
- Now add the cooked tur dal and Sฤmbhar masala one and half table spoon and Jaggery according to your taste and then some water and let it boil for few minutes.


6. Now take a small pan and heat some oil for tempering. Add curry leaves, Dry red chilli one, and mustard seeds if not added before.
7. Mix the tempering well. Your Sฤmbhar is ready to serve hot with delicious Green gram Idli. Garnish with coriander.
This healthy breakfast will not only keep you healthy but will also help you to avoid junk food in between your meal times. It is easy to make and yet will satiate your taste buds.
